I absolutely love Lemon desserts! But with lemon being so tart its often paired with lots of sugar to try and make it sweeter in most dessets. This one is refined sugar free but uses dates and 100% maple syrup for the perfect amount of sweetness!
I've made this in a cake tin and as individual tarts - same amount of ingredients works!
1- 2 Lemons (1T lemon zest + 2/3 cup lemon juice)
1/3 cup 100% Maple Syrup
250g Mascarpone Cheese
2 cups Granola Girls Paleo Granola
2 cups Dates
Throwing it together: (Preheat oven to 160 degrees C)
Base: Soak the dates in boiling water for about 10 mins to soften. Then blend in a good blender/ thermomix with the granola till it mixes together nicely. Press a portion into a muffin tin and/or cake tin making sure it goes up the sides slightly.
Tart mix: Whisk the lemon juice, zest and maple syrup until its all dissolved. Add the mascarpone and eggs. Whisk together.
Pour the lemon mix on the base and bake for 30mins.
I served mine with strawberries and cream!
