Granola Girls Easy Peasy Lemon Squeezey "Cheesecake"

Super easy and lovely light dessert. This one if of course, refined sugar free, gluten free and vegan. It was also enjoyed by all at a recent friends birthday party so great cake for all occasions! 
            
You will need for the base
  • 1 small tub of medjool dates (around 250g, I used Natural Delights)
  • 3 cups Granola Girls Paleo Granola 
You will need for the filling:
  • 3 cups nuts soaked for 4 hours or more (I used cashews & macadamias)
  • 3/4 cup (200 ml) lemon juice & the zest of one Lemon
  • 1/3 cup (80 ml) maple syrup
  • 3/4 cup (200 ml) of coconut oil melted
  • 1/2 tsp Himalayan pink salt
  • 1 tsp vanilla extract 
What to do next:
  • Soak the dates in boiling water for about 10 minutes to soften. While you are soaking, blend your granola until it resembles almond meal in a high powered blender or thermomix. Set aside. Then drain water from dates and blend them. Once they are at a paste like consistency mix with granola meal until all combine and press into your cake tin all along the bottom and a little up the sides. Place in freezer. 
  • Add all other ingredients to the blender/ thermo and combine until smooth and creamy. 
  • Pour your 'cheesecake' mixture onto  base and set in freezer for a few hours
  • Take out of freezer a few hours before serving so its nice and soft!
  • You can decorate however you wish! I used fresh lemon slices but raw balls, lemon zest would also look lovely!
