Who doesn't love a good chocolate cookie? Unfortunately, shop bought ones are usually full of sugar and nasty preservatives and additives - not good! These little mouthfuls of awesome, however, taste amazing and are far better for you and your family.
You'll need...
2 cups of Granola Girls Seriously Nuts granola, ground down to a coarse powder.
2 1/5 Tbsp melted organic virgin coconut oil
3 Tbsp raw cacao powder
2 Tbsp 100% natural maple syrup
1 tsp pure vanilla extract
1/4 tsp Himalayan pink sea salt (ground)
1/4 tsp Gluten Free baking powder
1 Tbsp shaved organic 70% cacao dark chocolate (for sprinkling on top before baking) *optional*
Method..

Pre-heat oven at 160 degrees (fan forced).

Line a baking tray with baking paper or rub with melted coconut oil.

Combine all ingredients, excluding the shaved dark chocolate, in a bowl or mixer until you have a smooth, creamy mixture and all the powder and ground granola is mixed in.

With your hands roll small balls of mixture and place evenly on the tray, press down slightly to form disc shapes (you can use a desert spoon for consistent size and shapes).

Sprinkle (or use a spoon) the shaved organic 70% dark chocolate onto the middle of each cookie.

Place the tray into the oven and bake for 15 Minutes or until the chocolate has melted into the top and edges are starting to look firm.

Take out of the oven and let rest until cooled slightly. The cookies will firm up a little more but should remain soft in the middle.
