
Carrot cake is one of my all time favourite cakes, normally loaded with sugar its not something I get to enjoy very often. I was unsure how this recipe would turn out but i was very pleasantly surprised! Its very moist, tasty and the dates and bananas make it lovely and sweet, not missing the added sugar at all! 3/4 cup Granola Girls 'Seriously Nuts' Granola

1 teaspoon baking powder

1 teaspoon cinnamon

2 - 3 peeled carrots (chopped if using a Thermomix or grated if using a food processor/ electric mix)

8 pitted dates

4 tablespoons coconut oil

2 free range eggs

1 teaspoon vanilla extract

2 ripe bananas

1/2 cup shredded coconut

1/2 cup walnuts
Method:
1. Blitz 3/4 cup of Granola with baking powder and cinnamon for 20-30 seconds, speed 10, in thermomix (or just until blended in a food processor.)
2. Add chopped carrots (or grated carrots if not using a thermomix) and 5 of the pitted dates. Chop for a few seconds, speed 5, or just blend in food processor until combined.
3. Add 2 eggs, 4 tablespoons coconut oil, 1 teaspoon vanilla extract and 2 ripe bananas. Mix REVERSE speed 4 for 30 seconds. Or continue to blend in food processor or beat with an electric mix.
4. Add shredded coconut, walnuts & remining dates chopped. Mix REVERSE, speed 4, for 15 seconds. (OR, just use the food processor or eclectic mix)
5. Put mixture in a lined loaf tin and bake for 40 minutes at 180 degrees Celsius.
For the icing I blended 100g cream cheese with a dash of vanilla extract & lemon juice & topped with more Granola! :)
