Cheesecake is a family favorite but it certainly doesn't have to be bad to be good! This no bake, coconut cheese cake is sugar free and tastes amazing.

You'll need:

  • 1 Cup of our Definitely Grainless Paleo Granola
  • 1 Cup of medjool dates
  • 250g cream cheese
  • 3 Cups of Coconut yogurt (bought or homemade - we used homemade)
  • 1 Vanilla bean pod
  • 1/4 Cup 100% natural maple syrup
  • 1 1/5 tsp gelatine powder (or agar agar)
  • 2 Tbsp hot water

Here's how:

  1. Using a food processor, combine the granola with dates and ground down to a course, sticky, powder (wet bread crumb consistency).
  2. Press mixture evenly into the base of a 120cm cake tin so its about half a cm thick throughout before placing into a fridge to set. (approx. 20 minutes)
  3. In a bowl, add the cream cheese and beat until smooth.
  4. Add the coconut yogurt, vanilla bean pod and maple syrup and continue to beat until mixture combines and is smooth.
  5. Dissolve gelatin or agar agar in the hot water so it is completely dissolved.
  6. Add dissolved gelatin mixture to bowl and fold through so the gelatin is completely mixed in.
  7. Take the base out of the fridge which should now be firm.
  8. Pour cheesecake mix on top of the base and spread around evenly.
  9. Place cheesecake in the fridge overnight to set.

Serve cold immediately from the fridge with fresh fruit and a dollop of cream. YUM!
