We couldn't decide what to call this amazing slice. This morning involved trying to decide whether we'd make a raw snickers slice or a caramel slice. Talk about tough decisions for a Sunday morning!
The solution? Why not make both... in one.
The result:

  1. 1 1/2 cups Granola Girls Seriously Nuts granola
  2. 1 cup pitted Medjool dates

Caramel peanut butter filling

  1. 1/2 cup organic peanut butter
  2. 1/2 cup tahini
  3. 1/2 cup coconut oil, melted and cooled
  4. 1 cup rice malt syrup
  5. Big pinch sea salt

Choc topping

  1. 1/2 cup coconut oil, melted and cooled
  2. 1/4 cup rice malt syrup
  3. 1/4 cup raw cacao

  1. Pulse the granola in a food processor until it resembles coarse breadcrumbs.
  2. Add the dates and pulse again until the mixture comes together.
  3. Line a square cake tin with baking paper and press the mixture into the tin to form a firm even layer.
  4. Pop in the fridge or freezer to set.
  5. Place all of the caramel peanut butter ingredients into the food processor until combined. (make sure your melted coconut oil is cool, otherwise the mix may split.)
  6. Pour your caramel mix over the base you have prepared and pop back into the fridge or freezer.
  7. Combine the Choc topping ingredients in a bowl and whisk together.
  8. Pour over your caramel mix.
  9. Smooth over until mixture is completely covered and you have a nice even chocolate coating.
  10. Place in the freezer to set for an hour... If you can wait that long to eat it..
Make it and share it on Instagram and don't forget to tell us about it :)
